Introducing Dariusz Stasik, the visionary explorer behind the newly unveiled la Planete in Jezyce. Fueled by an unwavering passion for diverse cultures and flavors, he brings the Earth’s bounty right to our doorstep. Dariusz, drawing inspiration from his extensive travels, has curated an exceptional menu that echoes his culinary journey. We sat down with him to unravel captivating stories and delve into the inspiration behind his extraordinary creations.
Greetings! Let’s kick off by asking about your extensive travels. How many countries have you explored?
Having spent numerous years traversing the globe, it’s challenging to pinpoint an exact number, but I tend to exclude most cold countries.
So, which city stands out as your favorite thus far?
I’m drawn to smart cities, so Tokyo is a definite favorite. Amsterdam and Taiwan also hold special places on my list.
What destinations are still on your travel bucket list?
From a tourist’s perspective, Mexico and Brazil are at the top.
Would you ever consider living in any of the countries you’ve visited?
If I were to make a move, Bali is the destination of choice. I encountered many individuals there who embarked on life-changing journeys, with some even opening restaurants. This inspired me to bring La Planete to life here in Poznan.
Are you a chef by profession?
No, I consider myself a food enthusiast who loves experimenting. The dishes I encountered during my travels motivate me to recreate them in Poland, and I believe I’ve done a commendable job—let’s say they’re 95 percent authentic.
What stands out as the most intriguing item on your menu?
Our Tagine takes the spotlight. It’s a vital part of Moroccan cuisine, deeply embedded in the culture for centuries. Not only does it refer to the traditional clay or ceramic cookware, but it also signifies the slow-cooked, stew-like dish. You can experience it right here on the table.
And your top three favorite dishes?
Certainly, the Tagine with mutton and dried fruits at 95 PLN—a perfect choice for sharing. The Greek-style oven-baked yams for 37 PLN, featuring oxtail butter, grana padano cheese, pomegranate, and tzatziki sauce with a touch of fresh mint. Additionally, our Flambees are delightful, with the French variant including pear and azure cheese for 35 PLN, complemented by homemade green pesto, walnuts, and fresh spinach. I recommend you pair them with Moroccan tea!
Everything tastes incredible! Can you teach me how to cook them?
Absolutely! We have workshops in the pipeline, and I extend an invitation to you!
I see you have many sculptures in the restaurant
Certainly, the sculptures you notice throughout the restaurant are predominantly souvenirs from my travels. Almost all of them are available for purchase, each accompanied by a certificate of authenticity. Take, for instance, the beam on the wall—it originates from a temple that tragically burned down.
What’s next for La Planete?
Workshops, as mentioned, and the launch of a YouTube channel where we’ll share recipes. We’re also eagerly anticipating the opening of our expansive garden in the warmer months. Dining al fresco, reminiscent of the countries that inspire our dishes, will elevate the experience.
Exciting times ahead! Thanks for the delightful conversation. I wholeheartedly recommend our readers to experience your menu, especially the top three dishes showcased here today. My personal favorite? The Tagine—it’s truly exceptional!
