When did you open?
Klimat opened its doors in May 2022.
You were in the final of Hell’s Kitchen?
Yes, that was seven years ago.
What have you been doing since then?
I continued honing my skills in various kitchens until I opened my own place.
Did Hell’s Kitchen impact your life?
Not significantly. The biggest benefit was learning a lot about cooking in 10 weeks, equivalent to two years of experience.
Should there be more Polish restaurants with Michelin stars?
Absolutely.
Is it one of your goals?
Perhaps in another city, Poznan isn’t quite ready for many Michelin stars. A Michelin-starred restaurant’s menu is very specific.

European, personalized, surprising.
How much can a person expect to pay for an average three-course meal at Klimat?
Around 130 PLN.
Your most expensive dish right now?
The deer, priced at 129 PLN.
Do you eat fast food like everyone else, such as McDonald’s?
Hahaha. Occasionally, it happens.
What do you cook at home?
I don’t
The best restaurant you’ve ever eaten in?
Bibendum, a three-star restaurant in London, where I also worked.
Who’s your favorite chef?
Many, but let’s say Marco Pierre White.
Do you shout a lot in the kitchen like Gordon Ramsay?
Hahaha, no. I’m calm.
Hardest thing about your job?
Keeping everything in check. I have to know everything!
When was the last time you had a complaint?
Hahaha, never. Perhaps an occasional one on Google. I welcome constructive criticism.
How long does it take to create a new menu item?
Between one day and two weeks is quite normal. Sometimes an idea just works from day one.
