Renata and Krzysztof: The Heart and Soul Behind Restauracja Rusałka’s Success

Nestled just 50 meters from the serene Rusałka Lake, Restauracja Rusałka has quickly become the go-to spot for spending a hot summer’s day in Poznań. Through their dedication and innovation, owners Renata and Krzysztof have transformed this restaurant into a legendary destination. The lake’s expansive shoreline, featuring a 94-meter sandy and grassy bathing area, provides the perfect setting for relaxation and indulgence. Visitors can enjoy a variety of attractions, including a pier, water equipment rentals, an outdoor gym, a playground, beach volleyball courts, a bicycle repair station, and a scenic bike trail along the Rusałka River. Renata and Krzysztof’s innovative menu is turning heads, adding to the allure of this exceptional retreat.

We met with Renata and Krzysztof to ask them how it all got started and to learn more about their journey in creating such a remarkable place.

Hello. Have you always been in gastronomy?

No, not always. I was a scientist and a molecular biology teacher until I resigned in September 2023. My wife led a group that helps handicapped people. Before opening Restauracja Rusalka, we were just like everyone else, enjoying meals at various restaurants.

Are you a family business?

You could say that. Besides our fantastic crew, my son and his girlfriend manage the concerts, and even my 10-year-old earns pocket money by doing odd jobs around the restaurant.

How did you decide to open Restauracja Rusalka?

In 2018, my wife’s sister told us about this place when it came up for rent. Since we live nearby, we decided to take a look and immediately saw its potential. Initially, my wife ran the place, and I joined her full-time after leaving my teaching job. Now, we both focus entirely on the restaurant.

Are you here every day?

Absolutely. There’s always plenty to do. Although we have a great staff and don’t need to be here all the time, we love being involved and spending time at the restaurant.

Was it not a risk to take on such a landmark place, especially without any experience?

It was definitely a risk, especially since we had to take out a bank loan to make it happen. There was an element of uncertainty for sure.

What is your most popular dish?

Our most popular dish is the Pyra z Gzikiem jak z Ogniska, priced at 48 zł. This regional specialty features potatoes paired with cottage cheese, onion, smoked cream, and linseed oil. We think it’s delicious!

Can people swim in the lake at night?

The lifeguard is on duty from 10 AM to 6 PM, so after that, swimming is at your own risk.

Has anybody ever left without paying?

Unfortunately, yes. However, we managed to catch them walking around the lake a few minutes later and got the money. Of course, they claimed they had forgotten to pay.

How many people turn up for your outdoor concerts on Thursday evenings?

It really depends on the weather and the performer. Attendance can range from 200 to as many as 3,000 people!

I’m guessing you sell plenty of beer on concert nights?

Absolutely! We’ve also noticed a high demand for 0% alcohol options.

What is the hardest part of running your restaurant?

The toughest part is predicting how much stock to order. If it’s sunny all week, we can sometimes run out of supplies.

Is it difficult living and working together 24/7?

Haha, it definitely has its moments!

Who is your chef?

Our chef is Arkadiusz Kulczinski. He is incredible. Currently, he’s a finalist for the Best Chef in Wielkopolska. Recently, he also placed third in the Best Chef in the Vegan Category in Poznań!

Wow. He must be expensive!

Haha, yes, he is, but a good chef is priceless! His talent and dedication are truly invaluable to our restaurant.

Well, it’s been a pleasure to meet you. One final question: Was it a good decision to leave your old lives and venture into gastronomy?

It’s definitely challenging but also incredibly satisfying. We’re very proud of what we’ve achieved here. Transitioning from our previous careers to running this restaurant has been a rewarding journey, and we wouldn’t trade it for anything.
