Revitalizing Polish Cuisine: A Healthy Twist at Najadalnia in Poznań”

Polish cuisine has often been characterized as hearty and filling, prioritizing quantity over quality. However, a shift in this perception is underway, thanks to a new generation of Poles redefining the culinary landscape. Among them is Najadalnia on Wodna 23 in the Old Town, one of Poznań’s recent additions to the restaurant scene, proudly showcasing that Polish restaurants in Poznan can not only be delicious but also surprisingly healthy. We popped in to speak to owner Maria about her new menu.

Hi Maria. Are you from Poznan?

Sure. I grew up in Grunwald

Where did you learn to cook?

From 5 years old I was already making sandwiches for my father. A few years later I remember cooking for friends and family gatherings. It came naturally to me

What are your top 3 passions?

Cooking for sure, loving life, and keeping fit

What was your first job?

I opened a cosmetics salon when I was 18 but I knew I would end up in gastronomy

Polish food prepared in a healthy way with good quality ingredients

What can we expect to find at Najadalnia?

On the table here today we have potato soup, vegan pumpkin pasta, Toasted cheese with garlic and parsley, and a breakfast with 3 eggs and Polish cut meats. Oh, and also the pierogi with Polish cheese and potato filling! These are all typical of the dishes you will find on our menu

It’s all delicious! Are the cakes homemade also?

Of course! I make them up on the spot, It’s a very spontaneous process for me. It’s when im at my most creative!

Are they healthy also?

Healthier for sure! We have vegan options as well as gluten-free and sugarless options. Try this vegan Snickers cake with no sugar. I recommend a pinch of salt…

What time do you serve breakfasts and what do you recommend?

We serve breakfast between 0830 and 1230 but it’s not unknown to go on a bit longer. You have probably the most popular breakfast on the table with the three eggs and Polish cut meats. I also recommend our banana pancakes with nuts and blueberries and no extra sugar added of course.

Yes. Many people dont realize how many good cheeses Poland has. We have among others blue cheese and milk gouda plus I make my own white cheese. We really want people to come in and try them. We welcome everybody to Wodna 23 in the Old Town!
