Poznań Daily is always on the hunt for the city’s freshest eats, and this time, we ventured beyond Rataje to Orła Białego. Too far? Nah, it’s just a few tram stops from Posnania, and trust us, it’s worth the ride.


The Boss
Meet Mateusz, the sushi master behind Trisu Sushi. With years of experience and a five-year stint in Norway, he’s bringing a unique twist to the Polish sushi scene. Norwegian sushi? Think gravlax-style cured salmon with dill and sugar, offering a different flavor profile compared to the traditional Japanese approach.

Why this location? “I grew up here,” Mateusz shares. “There’s a sentimental value, and not enough restaurants in the area. I wanted to help change that.”

Mats Favorite
His focus? Authentic Japanese-style sashimi and nigiri. His personal favorite? The Tatar z Łososia. “It’s a flavor bomb,” he says. “Quail egg yolk, chili threads, togarashi, tsuma, goma wakame, and sesame. Spicy, creamy, and umami-rich.”

Japanese Tapas
But Trisu isn’t just about sushi rolls. Some of their Japanese tapas lineup includes:
Krewetki w Tempurze: Crispy tempura shrimp with your choice of soy-based sauce.

Kalmary w Tempurze: Lightly battered calamari, golden and crunchy.

Spicy Edamame: Steamed soybeans tossed in sea salt and sake.

Nori Taco z Sałatką Krewetkową: A seaweed taco filled with shrimp salad, tsuma, chili mayo, and surimi.

Krewetki w Panko: Fried Panko-breaded shrimp.

Alcohol?
And for those watching their alcohol intake, they’ve got Kirin Ichiban 0.0%. This non-alcoholic Japanese beer boasts a clear golden hue, crispy malty notes, and a smooth, mild bitterness—perfectly complementing the delicate flavors of sushi.

Inspirational
Mateusz is also passionate about teaching. He employs young talents, passing on his sushi-making skills. We met Julia and also Busra, who is from Turkey, who shared, “Sushi isn’t big in Turkey, especially raw food. As a teacher, Mat is patient and calm. Rolling the perfect sushi roll is harder than it looks!”

The Favorite Set
Trisu’s menu features sets named after Japanese cities. The Tokyo Set for Two is a crowd favorite. And while tuna isn’t on the menu, Mateusz offers halibut from the Faroe Islands or Norway. “It’s fattier, tastes better, and isn’t a cheap cop-out,” he explains.
