A chat with Fabian Stube at Poznan’s mouth-watering Nanami Sushi

Nanami Sushi in Grunwald is owned by Fabian Stube who has been working with Sushi for over 14 years. He started his journey in highly-rated Art Sushi in Poznan back in the day and has gone on to work for sushi masters in Poland and abroad which sharpened his skills. His first exploration into his own restaurant started in 2022 with Nanami Sushi, which is primarily a takeaway joint located in Grunwald. It didn’t take long for the word to get around and he already has a loyal following who swear his sushi is the best in town!

Hi. Why did you choose the name Nanami? Does it mean something?

It has a few meanings in Japanese. For example, the word distinguished comes to mind 

Where did you learn to make sushi?

I actually started about 14 years ago in the well-known Sushi Art in Poznan. I worked in a few places since then including abroad.

What did you do before?

I finished Gastronomy school in Poznan.

What is the hardest thing about making sushi?

Making sushi demands expert knife skills to cut and clean each fish in the appropriate manner. It also involves creating perfectly formed rice, with the right balance of rice and vinegar to complement the fish it is being served with. It’s not as easy as you may think!

What is your favorite sushi you make?

Probably the Special roll with Salmon Tartar, chili sauce, and carrot flakes. It’s not on the current menu but you can ask me about it 

Can you put whatever you want in a roll?

Sure! That’s one of the most fun parts when you experiment and create something new!

I love Udon soups too. I see you have one on your menu!

Yes. The Yaki Udon is very popular. You can choose from a chicken, shrimp, tofu, or beef bulgogi version. I recommend you give it a try! The Korean Chili Chicken is pretty good also if I may say so myself 

Which roll is your best seller?

Futomaki for sure.

Where is the best Sushi you have ever tasted apart from your own?

Nare Sushi in Poznan. I worked there for 2 years in the past and I can honestly say it’s amazing. Im still good friends with the owners who are very nice people.

Is Sushi very profitable?

Not as much as you may think!

How would you rate your sushi out of 10?

hahah. I will let others decide. I try my best!

Do you eat sushi every day?

I love it but after 14 years of making sushi every single day, it’s too much. A few times a month is fine.
