It is with heavy hearts that we share the deeply saddening news of the passing of an extraordinary chef, colleague, and friend — Sergiusz Hieronimczak. Gone much too soon, Sergiusz leaves behind his family and a culinary legacy that will forever remain a part of Poznań’s vibrant food scene. 🖤

We had the privilege of meeting Sergiusz numerous times along our culinary travels and even sitting down with him for an interview — moments that now feel even more precious. His warmth, humor, and unshakable dedication to the craft made every encounter with him unforgettable, and we became friends.
Sergiusz was one of the most respected chefs in Poznań. To the wider public, he became known in 2015 as a finalist on the fifth edition of Top Chef Polska. Before that, he had left his original career path to fully devote himself to what he loved most — cooking.

For nearly a decade, he honed his skills in London’s top establishments, including Mandarin Oriental and Wyndham Grand at Chelsea Harbour, and completed his culinary education at the prestigious Westminster Kingsway College.
Upon returning to Poland, Sergiusz helped shape Poznań’s modern gastronomic identity. He led kitchens at Zagroda Bamberska, Holiday Park & Resort, and most recently served as Head Chef at Nifty No. 20 in PURO Hotel Poznań.
He was also the visionary behind Poznańscy Kucharze Razem — an initiative that brought together local chefs, uniting the culinary community through shared passion, support, and creativity. Though a political science graduate by training, Sergiusz was, above all, a man of the kitchen — full of passion, energy, and kindness.
As we say farewell to our friend, we hold on to the flavors, laughter, and inspiration he shared with us all. Sergiusz’s legacy lives on in every dish he inspired and every person he encouraged to cook with heart.
