He Built One of Poznań’s Most Interesting Cafés. He Can’t Make Coffee.

When it opened on Święty Marcin on 11 November 2019, the idea was to show concrete and terrazzo in a way no traditional showroom could.

“We wanted people to experience the materials we work with every day — not walk into another boring, empty showroom.”

So they built a café almost entirely from them.

“It started as a showroom with a café function. Thanks to the amazing people running it, today it’s more of a great café with a hidden showroom.”

The owner, meanwhile, can’t actually make the coffee.

“The question isn’t can you make a perfect coffee? It should be can you even make a coffee? Luckily, I know people who are very good at it.”

That’s where the team comes in.

Maciej runs the café, Stefania handles the baking, the baristas own the coffee, and Ola will lead the new Lastryko Verde.

“My philosophy is simple: talented people do their best work when you don’t get in their way.”

His only rules for the menu? Great ingredients and numbers that make sense.

The croissants.

“I love stealing one straight from the kitchen. Try one and I won’t need to explain why it has to stay forever.”

Making a flat white that disappears in five minutes and a terrazzo table designed to survive 50 years might sound like completely different worlds.

Not to him.

“Every craft at master level takes years. Behind every success is a whole pile of failures — whether it’s perfect coffee or a perfect table.”

Now we have Lastryko Verde, the second location and what he calls a natural next step for the brand.

Yet he doesn’t really see either café as simply hospitality.

“Lastryko Cafe and Lastryko Verde are probably the best things I’ve ever created. I look at them more as works than restaurants.”

Every detail reflects his approach to design, craftsmanship and people.

“To guests it’s just a café. To me, it’s much more.”

And the dream project still sitting somewhere in his head?

A space inspired by Chandigarh, India, the extraordinary modernist city associated with Le Corbusier — although he insists every future project must respond to the building and world around it.

So after all that, what exactly is Lastryko?

A café? A showroom? A design experiment?

Or perhaps the smartest marketing campaign a terrazzo company could ever build?

He laughs.

“Both, I guess.”
