Believed by some to be the oldest form of pizza, pinsa-like flatbreads have been a local specialty in Rome for centuries. The traditional recipe has been revisited several times over the centuries, until nowadays. The modern recipe we enjoy today was developed by baker Corrado di Marco in 2001. Now it seems that the rest of the world is starting to catch on, and thanks to Di Marco’s updated recipe and its melt-in-the-mouth texture and delicious flavor, we now have some of the best Pinsa Pizza in Poznan.

While pinsa and pizza share some common elements, they vary in texture, digestibility, ingredients, and preparation methods. Roman Pinsa, crafted from a mix of soy, rice, and wheat flour, offers a healthier pizza alternative. Pinsa presents a unique pizza with a crisp exterior and a soft interior and its lightness, enhanced protein, and lower gluten content make it a healthier choice. Thanks to Wazka Food & Drinks in Jezyce, Poznan, they have perfected the art of pinsa pizza and the locals are loving it!

Under the passionate leadership of Piotr, a local, 29-year-old culinary enthusiast with a decade of experience, this establishment welcomed its first patrons in February 2023, guided by a clear and humble mission: to offer the finest Pinsa Pizza in the city. Situated at the intersection of Szamarzewskiego and Polna streets, it finds itself in the company of some of Poznan’s most renowned, trendiest dining spots, setting the stage for a culinary challenge.

While a tantalizing selection of pasta, soups, and surf & turf dishes graces the menu, it’s the exceptional Pinsa that truly shines as the centerpiece of the culinary experience. We embarked on a Pinsa tasting adventure and came away thoroughly impressed. Our exploration led us to savor two distinct pinsas, each with its unique charm.

First up was the Umami-San, a culinary delight featuring coconut-truffle sauce, VEGAN mozzarella, caramelized pickled onions, wakame, shimeji mushrooms, and black sesame seeds. The verdict? One word suffices: delicious! Our second choice, the Andolini, offered an intriguing connection to the Godfather movie – Andolini was the real name of the character played by Marlon Brando. This pinsa boasted a harmonious blend of flavors, with tomato sauce, mozzarella fior di latte, chorizo picante, arugula, olives, oregano, balsamico, and a hint of orange zest. The result was akin to savoring ‘a cloud-like pizza’ with a satisfyingly crisp exterior and an irresistibly soft and flavorsome interior.

As we approached the end of our meal, we couldn’t resist the temptation to savor their Beef Ravioli. This dish featured a delightful blend of tomato sauce, cream, parmesan cheese, and a finishing touch of fresh parsley and basil. It undeniably stood out as one of the finest renditions of this classic we’ve enjoyed in quite some time! In essence, to focus on the pinsas, the airy and bubbly crusts, a hallmark of Pinsa Romana, elevated both pinsas to a level of pizza perfection that no pizza aficionado should miss experiencing. Highly recommended! Oh, and let’s not overlook the perfect pairing for your meal – whether it’s a tantalizing cocktail, a classic and rarely found Czech beer, or perhaps a refreshing Blue Moon Belgian white American Wheat beer.
